Anyone else having trouble burning off vital? seems to get to around 30K then stops producing

Make sure login every 7 days or so, production stops after 7 days if I recall right (actually, might be 14 days, so need to login twice a month)... and if there isn't enough between when you last logged in to when you login again, it won't use it.
If I recall right, planets don't update constantly, just when you login, or if someone spies them, so presumably a query of the db so it has to update. So if you have 30k V on a 10x planet set to use up 28k a day, if it is more than about 24 hours then it won't use it up, since it would go into the negative.
Also, I think production gets reset at round end, so if you didn't login for a week before round end, and then logged in the 2nd day of the month, you might only get 1 day of gathering. (maybe I'm just making that up, but I think so)

So, for strategists that want to know if someone found their planet and spied on it, if you are only logging in once a month, and you keep your planets' resources pretty level, should see a higher resource count on planets that have been spied since your last login.

Game doesn't do vital burn one update at a time, it does the whole calculation all at once when you check your planets (or someone spies them)

So for example, if you leave 100k vital on a planet, and have it set up to burn 25k vital per day, then check a week later, it'll calculate you needed 175k vital to produce for that week, and you will get no production at all instead

Interest and productions stop if a player does not log in. Last I read it was/is two weeks.
Not sure what if any interest is now.

Interest is still in, it's half a percent per day, does not apply to E/T

And there's some semantics here, you get production when you log in, but the maximum production you can get in one shot is 2 weeks. Logging in is one way to make production happen, but another is that when someone spies your planets, production happens for those planets (up to 2 weeks worth depending on when the last update happened)

So not logging in for 2 weeks doesn't make your production disappear into thin air, and if people are scanning you, you can have additional production beyond what you logged in for.

You can also use this to 'tune' the defense of an inactive player you're planning to attack, you spy them to figure out how fast they're gaining/losing defense, then spy them and time it to get them to their ideal defense number for you
